Scientific Name: Reinhardtius hippoglossoides
Species Description
The Greenland halibut or Greenland turbot belongs to the Pleuronectidae family (the right eye flounders), and is the only species of the genus Reinhardtius. It is a deepwater fish distributed mostly from 200 to 1600 m. It is mainly found in waters with temperatures from 1-4 °C. The central position of the left eye probably gives it a much wider range of peripheral vision in comparison to other flatfish where the eye has migrated completely. Both sides are pigmented; however the left blind side is slightly lighter in color than the right side. Dorsal origin behind posterior edge of upper eye. Caudal slightly forked to truncate. Pectorals small.
Distribution
It has a circumpolar distribution in the Northern Hemisphere and is found in both the North Atlantic and the North Pacific oceans. North Pacific: Yellow Sea to the Bering Strait, along the Aleutians, and south to about Los Angeles, USA. Rare in the southern part of its range.

Fillet
A fillet is a slice of meat that starts from behind the head down to the tail. The fillet can be with or without pinbones, skin-on or skinless.
Type of fillets:
V-cut: pinbone is removed along with the strip of flesh that is below the lateral line and 1/3 of the way back from the head.
J-cut: like the V-cut the pinbones are removed and the nape section of the fish is also removed. The nape is below the lateral line just before the belly.
Packing: 5/10kg in bulk IQF, 1kg bag IQF, interleaved or shatterpack
