Scientific Name: Oncorhynchus gorbuscha

 

Species Description

Distinguished by the presence of large black spots on the back and on both lobes of the caudal fin; the young have no parr marks. Fish in the sea are steel blue to blue-green on the back, silver on the sides and white on the belly; large oval spots present on the back, adipose fin and both lobes of the caudal fin. Breeding males become dark on the back, red with brownish green blotches on the sides; breeding females are similar but less distinctly colored.

 

Distribution 

Arctic and Pacific drainages from Mackenzie River delta, Northwest Territories, Canada to Sacramento River drainage, in California, USA; occasionally as far as La Jolla, southern California. On Asia side, from North Korea to Jana and Lena drainages in Artic Russia. In Bering Sea north of about 40°N and from Bering Strait northeast to Point Barrow and northwest to Lena estuary.

Block

Fillets or pieces of meat are placed in a frame  or carton and frozen in a plate freezer. The sizes and out appearance are usually uniform and can easily be further processed into fish fingers or smaller cubes by machines.

Fillet

A fillet is a slice of meat that starts from behind the head down to the tail. The fillet can be with or without pinbones, skin-on or skinless.

 

Type of fillets:
V-cut: pinbone is removed along with the strip of flesh that is below the lateral line and 1/3 of the way back from the head.

J-cut: like the V-cut the pinbones are removed and the nape section of the fish is also removed. The nape is below the lateral line just before the belly.

Portion

From a fillet, these are usually cut into smaller more individual sections which are normally sized in ounces or grams. A portion can be pinbone-in or pinbone-out. This cut is especially popular in foodservice.

This cut is a across-sectional slice of a finfish and is cut perpendicular to the backbone.
