YELLOWFIN SOLE

Scientific Name: Theragra chalcogramma

 

Species Description

The dorsal fins are widely separated. The pelvic fins have a slightly elongated filament. The lateral line is continuous to about the back end of the first dorsal-fin base; it is interrupted at the read of the body. On the head are lateral line pores. Body color is olive green to brown on the back and becomes silvery on the sides and pale ventrally, often with mottled patterns or blotches.

Distribution 

North Pacific: Korea and the Sea of Japan to the Sea of Okhotsk, Bering Sea, and Barkley Sound, Canada. Reported from the Alaskan Beaufort Sea.

The rolls are made of single fillet with holow center sometimes or a finger of other fish like Salmon is wrapped inside.

Fillet

A fillet is a slice of meat that starts from behind the head down to the tail. The fillet can be with or without pinbones, mostly the black skin side is skinless and white skin side is skin on. 

 

Type of fillets: 

Single fillet: fillet is from one side of the fish, either the one of white skin or black skin.

Married fillet: the fillet of white skin side is combined together with the fillet of block skin side during the process of freezing. The black skin side is usually skinless.
